Nut Roast
Nut Roast - easy peasy, excellent vegetarian protein and delicious. This recipe is a family favourite, freezes well and is very quick to make.
You will need: 2 slices bread 3 handfuls mixed nuts 1 Onion 1 Carrot 1 Apple 1 tsp Marmite 1/2 handful raisins How to: I tend to bung the bread into my Magimix, and blitz, then add the nuts - almonds, walnuts and whatever else I have - and blitz the lot. It's quite nice to leave some small chunks of nut there, for texture. Remove this and put into a large mixing bowl. Put the grater blade on the Magimix, and grate the onion. Fry in a little butter until translucent, then mix in the marmite. Add to the mixing bowl. Grate the apple and carrot and add these, together with the raisins to the mixing bowl. Combine together well and press into a rectangular, oven-proof dish. Cook at 200C for about 45 minutes. This is popular with meat-eaters and vegetarians alike, as well as being an easy dish - it can even be made in advance and left in the fridge overnight before cooking, and it freezes well in slices.
